Ayurvedic Scrambled Eggs

4 organic free-range eggs
2-3 tbsp ghee
1/2 tsp cumin seeds
1/2 tsp fennel seeds
1/2 tsp turmeric powder
1/2 tsp coriander powder
optional: ground black pepper
optional: leafy greens (kale, chard, collards, etc.)
optional: 1/2 tsp Mum's Masala
garnish with cilantro and/or parsley

Melt ghee in pan over medium heat and then add spices. Once full aroma of spices is released, add eggs. Stir eggs with ghee and spices until cooked. Add leafy greens if desired--they cook at the same time as eggs and make an excellent addition.
