Ayurvedic Oatmeal

1 cup organic rolled oats
2 cups organic un-homogenized whole milk (ideally raw, otherwise pasteurized is okay)
1 cup water
2 tsp ghee
1 pinch saffron threads
4 crushed green cardamom pods (with peel)
1/2 tsp cinnamon powder
1/2 tsp turmeric powder
1/4 tsp nutmeg powder
sweetener of choice (maple syrup, rapadura, turbinado, sucanat, honey once food stops steaming)
optional: 1/2 tsp Madhur Masala
optional: 2-3 organic medjool dates

Serves 2. 

Saute ghee and spices over medium heat. Once aroma is full, add oats. Dry toast in ghee and spices for a couple of minutes. Add milk and water. Bring to a boil and then lower heat to medium-low allowing the oats to simmer until desired consistency is reached. 

This recipe can be made purely with water, or with any ratio of milk:water. A suggested alternative to cow's milk is almond milk. If you opt for almond milk, the almonds must be soaked overnight, and then blanched before blended and strained to make the almond milk.
